Perfect kind of Saturday

Woke up to 50 degree weather in Cincinnati. We couldn’t wait to get outside! Evan (my boyfriend) made us a delicious breakfast. Egg in a basket, but with a waffle instead of toast.

What a delicious way to start the day. Poured some syrup on this baby and within minutes it was gone! After breakfast, we had a few errands to run and after we went on a hike at Mt. Airy forest. It was so beautiful outside but we quickly realized it was way too muddy to finish the trail.

It was fun while it lasted though. We ended up going home and taking a walk around the neighborhood. I love the outdoors and the way it makes me feel. The Fresh air is so rejuvenating. After our 2.5 mile walk we relaxed for a bit. Now it’s time to get ready for a big night out on the town. Shhhh… We have a surprise 40th birthday party for a dear friend. ☺️

Hump Day

And we are half way through the work week. YES! Last night I met my boyfriend and some friends at Perfect North slopes to get some ski time in before it’s too late.  The snow came late this year so I have to take advantage of it while I can.  Crazy Cincinnati weather. The reason I’m telling you all this is because I meant to write a post last night but a free lift ticket AND rentals was too good of a deal to pass up. So, I will make this blog post extra good and juicy.

A really yummy dinner and a workout = a typical hump day. Tonight for dinner I made Chicken Paad Thai with zucchini noodles. It was was incredibly delicious. I followed this recipe taken from Joyful Healthy Eats. I changed up a few things but followed the recipe for the most part.

First, I spiralized the zucchini and carrots. I used Paderno World Cuisine Spiral Vegetable slicer. I absolutely love this thing.  Bye bye pasta noodles (sometimes).

 

 

Here are the other ingredients I used for the meal:

I mixed the following ingredients together to make the spicy peanut sauce:

3 cloves of garlic minced

1 tablespoon of ground ginger

3 tablespoons of peanut butter

1/2 cup of soy sauce

1 tablespoon of chili garlic sauce

1 tablespoon of sriracha chili sauce

juice of one lime

Mix together and set aside. I diced up the 3 chicken breasts and marinated  in some soy sauce, garlic chili sauce and minced garlic. I LOVE garlic if you can’t tell 😀. Then I did a quick workout to Jillian Michaels, Boost Your Metabolism DVD. She kicks your ass!  Such a great workout.

After the workout, I pan fried the chicken pieces for about 7 minutes. Once the chicken was fully cooked, I removed the chicken from the pan and tossed the zucchini and carrots in the pan. I sautéed the noodles for about 5 minutes.  Finally, I added the spicy peanut sauce, chicken, bean sprouts, cilantro and green onions and wa Lah, dinner is served.

This meal was so tastey and delicious. There were plenty of leftovers which makes me very excited for my lunch tomorrow. If you like Thai food, chicken and zucchini, I highly suggest giving this meal a try. If you do not have a spiralizer, checkout Amazon. Definitely worth the purchase!

Sunday Funday

I love Sundays, especially when I wake up and I’m not hungover.   Today has been a pretty productive day so far. We woke up, made egg, turkey bacon and avocado sandwiches and then off to the grocery I went. We are having another couple over for dinner so I had to go grab a few things. I’m making an Indian chicken dish in the crockpot. I was originally going to make saag but couldn’t find garam marsala in the grocery store anywhere. I ended up taking the easy route and used these ingredients to make my crockpot meal.

I placed 6 chicken breast into the crockpot. I ended up cutting the chicken into bite size pieces so the chicken cooked quicker. I put the temperature on low and moved onto mixing the sauce. I diced an entire onion and sautéed with a tablespoon of coconut oil.I then added 2 tablespoons of minced garlic and a tablespoon of minced ginger. I sautéed for about 5 minutes and then added the Madras Curry jar and 3 tablespoons of the curry paste. I then slowly mixed spinach into the sauce until the spinach looked wilted. I then added the sauce into the crockpot.

I cooked 2 cups of Balsamti rice in 3.5 cups of boiling water and then covered and simmered for 20min. I also baked some naan to serve with the meal. The end product was amazing. So delicious. I will definitely be making this meal again.

My friend brought over strawberry shotycake for desert. It was very delicious. Everything was so delicious which probably explains why I’m so full. Now it’s time to relax and finish watching the Panthers destroy the Cardinals (dang it!). Happy Sunday!

Currently reminiscing

Since it’s currently freezing in Cincinnati, my boyfriend and I have began looking at vacation options. Last September, we took a trip out west. We went to The Grand Canyon, Bryce and Zion. The picture above was taken at Bryce. It was incredible.

The Grand Canyon was our first stop. We stayed at The Holiday Inn right outside the park. It was 5 min from the entrance and since we had our own rental car, we didn’t have to wait for a shuttle for transportation. We explored the first day and was in bed early to make sure we woke up for the sunrise the next morning. The sunrise experience was incredible.

Later in the day we decided to checkout the The Bright Angel trail. This trail goes down into the canyon and a camp spot is at the bottom. We did about 6 miles round trip. The way down was a lot easier than the way back. Holy workout! This is what we hiked into…

Our next destination… Bryce Canyon. I was blown away by the beauty at Bryce. We drove into Bryce around 9pm so we didn’t have a chance to explore until the next morning. We stayed at Ruby’s Inn; one of the few hotels outside of the park. Location is key 😉. The next morning, we decided to explore the canyon by horseback since our legs were sore from our Grand Canyon hike the day before. We explored a little before our horseback excursion. This was one of my favorite spots. It’s called The Natural Bridge. So incredible!

Next up, horseback riding! We were SO glad we decided to pay $80 per person for this excursion. It was about 4 hours long and we went with another couple who was oddly enough from Dayton, Oh.

The lady in the middle was our guide for the day and she was awesome. She taught us so much history about the land we were going through; everything from the hoodoos to Butch Cassidy! So interesting. We had such a memorable time.

After our horseback excursion, we grabbed something to eat and rushed into Bryce Canyon National Park. We explored the different areas of the park but were bummed because we couldn’t find the one spot we saw from all the pictures we saw on the Internet. We almost gave up but at the last second, we drove by Sunset Point. We had a little time before sunset so we explored a little.  We hiked into Bryce Amphitheater and were amazed!

After exploring, we realized the sun was setting so we rushed back to the top of the canyon. I couldn’t’ believe my eyes. I was blown away by the beauty of the colors of the sky and the canyon. I kept on telling Evan (my boyfriend), “I feel like we are in some kind of fairytale.” Everything looked so surreal.  Let me show you what I’m talking about…

Isn’t that incredible? I didn’t want to leave because I couldn’t stop staring and taking pictures. I recommend checking a sunset at Bryce Amphitheater to anyone who gets the chance to. I will never forget that moment. I couldn’t of imagined a better way to end our trip at Bryce.

Next stop… Zion National Park. A best friend of mine lives in Park City, Utah, so her and her boyfriend came and met us at Zion. They had been there before so they had a spot in mind where we would “set up camp”. I was so excited to see my BFF, Amber and her boyfriend, Greg.

They already had a camping stop in mind but warned us that our little Nissan rental probably wouldn’t make it up the hill. We tried anyway and got about a fourth way up the hill and then… our car got stuck on a boulder. The dirt road had huge boulders everywhere on the path. I couldn’t believe it. We ended up getting the car off the boulder and drove back down so Amber couldn’t pick us up in her Subaru. Once we finally got to our camping spot, we realized why Amber and Greg wanted to come to this spot. The treacherous ride was definitely worth it. Our campsite was a cliff overlooking this…

How insane is that view? Once again, I couldn’t believe my eyes! The scenery out west is in incredible! After exploring a bit and “setting up camp”, we decided to take it easy because we wanted to watch the sunset. We were incredibly lucky because we just so happened to be camping out at Zion during a BLOOD MOON.  We tried taking pictures of the BLOOD MOON but the camera didn’t pick up on the orange color of the moon 😔. Let me just tell  you, the moon was huge and was an orange/red color. It was insane.

The next day we had plans to hike The Narrows and Angels Landing. Looking back, we probably should have done Angels Landing first and The Narrows second but whatevs. The Narrows was awesome; cold but awesome. I think we started The Narrows around 8am and considering we had to walk through a foot or more of water at certain points, we were pretty pretty cold. However, the excitement and adrenaline kept us going. The Narrows was awesome. The canyons were huge and I couldn’t believe how long the hike was. We didn’t go to the end because we didn’t want to hike through neck high waters but we experienced some pretty cool stuff.

After The Narrows, we headed to Angels Landing. Evan and I had no idea what we were getting into. Apparently this hike is known for its steep climb and views. I unfortunately do not have too many pictures because I was too busy trying to stay alive.  No joke, this was one hell of a hike and I’m in pretty decent shape. We were holding onto chains on the side of a cliff at one point. I felt very accomplished after climbing this massive canyon.

After that that hike, we all were exhausted! We grabbed some pizza and headed back to our camp spot for the evening. We watched the sunset then relaxed for the rest of the evening. The next day we  headed back to Vegas before heading back home. We stayed one night in Vegas but wished we could have skipped Vegas all together. After that amazing time we spent out in nature, the big city sounded horrible but we made the best of it by endulging in margaritas and Mexican! All in all, it was a trip of a lifetime.

Now we begin planning our trip to Yosemite. We both cannot wait to get back out west to explore some more.

Ohhhh Friday

My very first blog post! WahooOoooo … and ……It’s Friday.

I decided to start a blog so I can begin documenting my tastey meal recipes, traveling excursions, current fashion trends and occasional workout sessions. I enjoy each one of those things SO much that I decided to share my experiences with the world. So, you’re welcome 🙂

Currently, it’s freezing cold in Cincinnati and there is a winter weather advisory. This past Monday, the weathermen predicted 10+ inches of snow in Friday. As I sit here blogging, I’m currently looking out the window watching now snow fall. Now the weathermen are predicting 1 to 2 inches of snow. Nothing like what Washington D.C. is experiencing. However, like every other person who lives in an area with snow fall, any prediction of snow fall causes the public to sprint to the grocery store. So, what did I do? I went to the grocery and decided to make a yummy Thanksgiving meal to warm myself up on this freezing winter evening.

On the dinner menu this evening is:

-a turkey thigh in the crockpot with poultry seasoning and turkey gravy

-stuffing

-sweet potatoes

-green beans

I stopped at Findlay Market on my way home from work to pick up a turkey thigh and some poultry seasoning. I already had all my other items. Since its the freaking weekend, I also picked up a small cheesecake from Taste of Belgium. Whoops 😜

The turkey thigh is currently marinating in the crockpot.

Just a couple more hours until this bird gets devoured. The sides are pretty simple to make. I’m putting the sweet potatoes in the oven for about 45min at 400 degrees. The green beans will be steamed for about 10 minutes and the stuffing, well, it’s Kraft Stove Top because Friday, I’m allowed to be lazy. The gravy is a packet! And there you go! A hearty home cooked meal in a cold winter night!

I have zero plans this weekend and I cannot wait to do absolutely nothing. Winter is hibernation mode for me and I’m completely okay with that.I hope everyone enjoys their weekend. I know I will.
