Re-Cap of Easter Sunday

I hope everyone had a wonderful Easter! It was beautiful in Cincinnati yesterday. We lucked out with warm weather and sunny skies. Thanks Mother Nature!

We had a jammed packed day yesterday. We went to mass at Crossroads at 11am with Evan’s family and then went out to brunch at Seasons 52. I love Seasons 52. Everything on the menu is healthy and fresh. I ordered the Maui Tuna Crunch salad. It was delicious and only had 360 calories. Score! Evan ordered the Eggs Benedict with lobster meat. His meal was delicious too and only had 470 calories. Garrett ordered the French Toast. I didn’t try his but he kept saying how incredible it was and devoured it in about 5 minutes.  I assumed he enjoyed it. 😊 We snapped an Easter photo before we left.


After brunch, we headed home to find the Easter baskets we hid for one another. I ended up finding mine inside a suitcase in our closet. I was the first one to find a basket! I’m so lucky to have a boyfriend with good taste. Evan got me earrings, a shirt, a framed picture collage and lots of yummy candy. He is so thoughtful!


After we all found our Easter baskets, I made an imitation Dewey’s house salad to bring to my aunts. I’m always in charge of bringing a salad. I try to switch it up every holiday.

Going to the Kaine’s side of the family (my mom’s side) is always a little hectic but a lot of fun. A little hectic meaning a lot of people. My mom is 1 of 10 so I’m sure you can imagine what it would be like. There’s a lot of kiddos so my uncle always hides a bunch of eggs every year. Three eggs are “golden eggs” with $20 bucks in each. My niece, Bella, could barely stop to get her picture taken. She was too excited to find the eggs.


It’s always nice seeing family. The older I get, the harder it is to see extended family on a regular basis.  I especially enjoyed seeing my sweet grandma, Dink. She’s a gem.


Dinner was delicious! Everything from ham to mac and cheese to salad to mashed potatoes… We had a lot of food. After all that food, I was ready to go to sleep. We said our goodbyes and headed home. It was a long fun-filled day with family!

Black Bean & Spinach Enchiladas

Tonight for dinner I made Black Bean and Spinach Enchiladas. These were delicious! I was not sure what to expect but I was pleasantly surprised. Enchiladas without meat CAN be delicious! I promise!

I used a recipe from She comes up with some delicious and creative meal ideas! Here’s the recipe below:


I followed the recipe pretty spot on. The only thing I added was a spoonful of sour cream to the sauce and some red onion to the filling mixture.


After mixing the sauce, I put the 8 oz of spinach into a frying pan until the spinach looked wilted.  I then mixed together the spinach, corn, blackbeans, green onions, cilantro, cheese, cumin, a dash of salt and I added a 1/2 cup of red onion. I then mixed all the ingredients together.


I poured about a 3/4 cup of the sauce into a greased baking pan. I rolled the filling into a tortilla and placed in the pan one by one. Once I finished rolling the enchiladas, I poured the remaining sauce on top. I had some filling leftover so I scattered over the enchiladas and topped off with some cheese.

I baked at 375 degrees for 20 minutes. I also broiled the top of the meal for a couple of minutes. This meal hit the spot!

Favorite Face Products

For this post, I am excited to share some of my favorite face products.   Typically, I do not stay loyal to products unless I immediately fall in love with. With that being said, the products I’m about to share are products I will continue to purchase for the rest of my life!



This self tanning lotion is amazing! I have tried many self tanning lotions and I have found myself disappointed due to the orange tint, terrible smell and the uneven streaking marks it left on my skin. Sun is the one tanning lotion I finally found that leaves my skin looking natural, tan and smell free! You can purchase this product online at There is a medium shade and very dark. My boyfriend mistakenly picked up the very dark for me at the salon he works at, Mitchells. It works great but is a little darker than I am use to. You do not have to use as much if you decide to go with the very dark.




The Ole Henriksen The Whole Truth kit leaves my face looking refreshed and rejuvenated. It’s a 3 step process: 1st you put the face serum on, then the hydrating crime and lastly, you put on the eye cream. I use this product every night before I go to bed and in the morning. It smelled a little funky to me at first but quickly overlooked that after seeing the great results!



This stuff works wonders! I never used to use liquid moisturizers, however, this product has changed my outlook on liquid moisturizers. It blends incredibly well and makes my face looking flawless. The older I get, the more I notice the lines on my face. This moisturizer helps to diminish those lines and leaves my face looking youthful again. This product is a must have!

This week has been a total whirlwind. Evan’s grandma ended up passing away on Tuesday morning. She had a heart attack. She came back to consciousness on Monday and had a full conversation with her son (Evan’s dad) after having a stroke on Sunday. We were saddened by the news of her passing but continue to remind ourselves that she had a glorious 99 years on this earth. This post is dedicated to sweet Do Do.


One of Evan’s half brothers came in town from Florida for the weekend. He already planned on coming in town to see Do Do but ended up at her funeral on Friday. At least he was able to make it in town to celebrate her life. With that being said, we planned on hanging with him on Saturday night.  We went to dinner at the Taft Ale House and then out on the town in OTR.  Evan’s parents, sister and boyfriend joined us for dinner. Thanks to the No Wait app, we were able to put our names in before we arrived at the restaurant.

I ended up ordering the Salmon Sandwich with sweet potato fries. The sandwich was delicious! Lots of flavor. Evan ordered the steak tacos. He said they were delicious as well. After dinner we headed to Sundry and Vice and then 16 Bit to play some arcade games. It ended up being a long night. We were glad to spend some quality time with Evans’s brother who was in town.


Tonight, I am taking my dad to the Jimi Hendrix Experience at The Taft for his birthday! The show is sold out. I cannot wait to check it out. I’ll let you know how it turns out.

Monday Meat Dinner

It’s been a week or so since my last post (sorry!).  Things have been a bit crazy! My boyfriend and I just got back from a weekend away. I will write a post about that but the post will be pictureless because I thought I forgot my phone and come to find out, it was under the seat on silent the entire weekend. 😔 Oh well! We also came home to hear Evans’s 99 year old grandma had a stroke. We visited her at the hospital and could barely recognize her. Today, we were thankful to find out she was sitting up and talking again! We are still in shock and can’t even believe it. She always did say she wanted to live to see who becomes the next president. She wasn’t kidding! She’s a fighter, that’s for sure.

Anyway… last week my boyfriend and I attempted to “eat clean” most of the week. We did pretty well for the most part. We only had meat once and we also cut out dairy a majority of the time. With that being said, tonight we are ready for some meat. On the menu tonight is: Balsamic chicken in the crockpot with carrots and broccoli along with some roasted quartered potatoes.

I used a recipe from Damn Delicious for the chicken.


Next, I quartered 8 small red potatoes and tossed in olive oil, garlic salt, oregano and basil. I baked the potatoes at 400 degreesfor 30 minutes.

In the meantime, I peeled 7 carrots and cut up some broccoli. I tossed the veggies in olive oil and the same seasoning as the potatoes. After the timer went off for the potatoes, I put the veggies in the oven, along with the potatoes, for 20 minutes at 425 degrees.

And dinner is served…


This was a delicious meal and easy too! Love crockpot meals 😊

Eggplant Parm

I decided to make Eggplant Parmesan for the meatless Monday meal this week. It turned out so good! I stole a recipe from a blog called, Table for Two.

First, I cut the eggplants (I used 2) into 1/2 inch slices. Then I laid  the eggplant slices on paper towels and covered with paper towels, in order to soak up all the moisture from the eggplant.


I let the eggplant sit for about 40 minutes.

After, it was breading time! I spread 2 cups of panko crumbs, some Italian seasoning and a dash of salt and pepper on a plate and then mixed 1 cup of milk and 1 egg in a bowl. Next, I dipped the eggplant slices one by one in the milk and egg mixture and then breaded with panko crumbs. I set the pieces aside on aluminum foil.


After, I poured 3 tablespoons of oil (whichever you prefer) in a frying pan and turned on high. I placed 2 or 3 pieces into the pan and fried for about 2 minutes on each side.


After I fried the pieces of eggplant, I poured a thin layer of marinara (I also used a small amount of white garlic sauce) into a baking pan. I then layered the baking pan with eggplant pieces. Between each layer, I poured marinara sauce and sprinkled some Parmesan and mozzarella cheese.

After I finished the layering, I sprinkled a little more cheese on top and then put the meal in the oven. Bake for 20-25 minutes, or until the cheese is bubbly and brown on top. I used the broiler for 5 minutes to get the cheese nice and brown – you don’t have to, but if you do, watch it carefully!


I put the eggplant slices on top of spiralized zucchini and I served with a healthy salad. Such a delicious meal!

Weekend Re-cap

Whoa, what a weekend. Fun filled The weather was amazing which made the weekend just that much better. I also cannot wait to share what a great experience my friends and I had at a restaurant called E+O.

After work on Friday, I went to happy hour with some work people and Evan came and met us as well. We went to Taqueria Mercado and had a couple of margaritas. Any more than 2 of those things and you will be hammered. It’s crazy really. After happy hour, Evan and I met my brother and his girlfriend at the nearby Gastro Pub. A friend was in town from LA, so he met up with us too. We had a great time with the band and this place has the best people watching ever.

Saturday, I woke up to beautiful weather. I took advantage of the weather and went to the park with my friend, Abby and her two adorable kiddos.  We went to Mitchell Memorial and walked around the lake, played on the playground and had a little picnic. Nice little Saturday. Saturday evening, my friends and I went to E+O to celebrate mine and my friend, Sammy’s birthday. We actually have the same birthday, February 11th. Anyway, E+O was amazing. A few of us split the brussel sprout salad with fried kale, chilies, carrots and shrimp-best thing ever! We also split the wholly-mole which was also so delicious! I was very impressed at this point. Everything tasted so fresh and full of flavor. Sorry I didn’t snap any pictures of the food. I was too busy eating. For my meal, I ordered the crispy chicken tacos. I immediately noticed the tastey sauce on the tacos. I’m all about my sauces. 😋 I devoured the tacos, so good. I give this place a 10 and I will definitely be back! Here are my hottie friends 😘



We had a great night! Always good to see my girls.

Sunday, I woke up not hungover. I was very proud of myself. Sunday was also beautiful out. Evan and I decided to go walk down at Smale Park along the Ohio River. We walked a couple of miles. It was so pretty out!


After our walk, we grabbed lunch at Arthur’s in Hyde Park. I ordered a spicy black bean burger with fries. It was delicious. I love good food! After lunch, we went to Findlay Market to grab a few things for the week. We love to go and pick out new spices to try. We always pick something different. After Findlay Market we met my brother and his girlfriend at the park to soak in the last couple hours of sun. My dad also met us for an hour or so. After the park, we were pooped!  Long day on the go! We went home and cooked a shrimp Thai meal with zucchini noodles. It was delicious. So much flavor! I’ll have to share the next time I make it. We watched Straight Out of Compton while we ate dinner. I thought the movie and food were great! Perfect way to end a Sunday evening.

It ’twas a long weekend but I enjoyed every minute of it with people I love! Couldn’t ask for more in life.
